Gingerbread Cookies

Try making our Gingerbread Cookies – they taste great and also make fabulous Christmas Tree decorations!

December is here, which means Christmas is officially on its way! It won’t be long until we’ll be putting out a mince pie and carrots for Santa and his reindeer. The kids will also be breaking up for the holidays soon which means thinking of ways to keep them entertained as they wait for Christmas Day to come. To help keep them occupied, holiday baking is always a good idea! Try making our Gingerbread Cookies – they taste great and also make fabulous Christmas Tree decorations!

Ingredients

  • 480g x Flour
  • 2tsp x Baking Powder
  • 4tsp x Ground Ginger
  • 3/4tsp x Ground Mixed Spice
  • 180g x Golden Syrup
  • 180g x Butter
  • 120g x Sugar
  • 1 x Egg White
  • 150g x Icing Sugar
  • Decorations

Method

Biscuits

  1. Pre-heat oven to 180 degrees
  2. Mix all dry ingredients together
  3. Add Butter and mix until breadcrumbs form
  4. Add Sugar, then Golden Syrup to form a soft dough (if the dough is hard, add a little water)
  5. Roll out dough to roughly 7mm thick
  6. Cut into shapes using cookie cutters
  7. Punch hole in top of biscuits (wide enough to pass string through)
  8. Place in oven and cook for 10-15 minutes
  9. Remove from oven and leave to cool

Royal Icing

  1. Whisk Egg White until foamy
  2. Slowly fold in Icing Sugar
  3. Pipe icing onto biscuits and decorate
