Christmas Pudding Parfait

Love it or loathe it, Christmas Pudding is a must on Christmas Day. If the taste of the traditional pudding isn’t for you, why not try making our Christmas Pudding Parfait as a tasty alternative this year.

Ingredients (serves 8)

  • 3 x Eggs
  • 125g x Sugar
  • ½ltr x Cream
  • 200g x Christmas Pudding


  1. Whisk Eggs
  2. Boil Sugar with 50ml of Water and cook to 118 °C in a Sugar Thermometer
  3. Pour this into the Eggs and whisk until cold
  4. Semi whip the Cream and fold into Egg mixture
  5. Crumble the Christmas Pudding and fold into the mix
  6. Pour into moulds
  7. Leave to freeze

To Serve

  1. Turn Parfait out onto a plate
  2. Pour over hot Chocolate Sauce
  3. Decorate with Holly
