How to make Christmas Pudding Soufflé

Ingredients (serves 4)


For the base:

  • 450ml x Milk
  • 5 x Yolks
  • 80g x Sugar
  • 45g x Strong Flour
  • 150g x Christmas Pudding (Crumbled into mix)

    For the Soufflé:

  • 100g Soufflé Base
  • 80g Egg Whites
  • 30g Sugar

Method:

Step 1:

Whisk yolks and sugar together, add flour and mix to make a smooth paste. Boil milk, when boiling add a little to the paste. Re-boil milk, pour paste into boiling milk and whisk until thickened.

Step 2:

Add your crumbled Christmas Pudding to the mix

Step 3:

To make the Soufflé – whisk whites, slowly adding sugar till stiff peak. Mix 1/3 of whites into base then fold the rest in.

Step 4:

Spoon into greased and sugared ramekins and level off top with pallet knife.

Step 5:

Cook at 180ºc for 11 minutes and serve immediately.
