Herb Roasted Chicken, Green Beans, Black Olive, Cherry Tomato and Herb Salad

Ingredients(2 portions)

  • 1 x 200g Chicken Breast - Skin off
  • 10 x Black pitted Olives
  • 20 x Blanched Green Beans
  • 10 x Cherry Tomatoes cut in half
  • 400g of Mixed Leaves (Wild Rocket, Radicchio, Red Chard, Lamb’s Lettuce and Baby Gem)
  • Selection of Mixed Herbs (Basil, Parsley, Chives, Tarragon)
  • Sea Salt & Pepper
  • Purple Cress for Garnish
  • 30ml x Italian Olive Oil
  • 10ml x White Wine Vinegar

Method

  • Seal the seasoned Chicken Breast in a hot pan with a little Olive Oil
  • Chop half of the Mixed Herbs and roll your Chicken in the herbs
  • Place the Chicken Breast into a Warm Oven (180c ) for 18minutes or until cooked
  • Wash and dry your Salad Leaves
  • Mix the Olive Oil, Vinegar and Seasoning together
  • Once the Chicken is cooked, slightly cooled but still warm slice into strips
  • Slice the Olives in to rings

To Serve

  • Place all the Ingredients into a large bowl and mix with the dressing and remaining herbs
  • Arrange into two bowls
  • Display the Chicken Breast on top and garnish with the Purple Cress
