Are you planning on spoiling Mum this year with a home-cooked meal? Perhaps you could try and make her this special, sweet and delicious Sticky Toffee Pudding with Pecan Sauce for dessert. The recipe below is for a miniature version, so ensure you use four small individual moulds! Serve with a scoop of Ice-cream and the Pecan Sauce and your Mother is in for an indulgent treat this Mothering Sunday...

Ingredients:

For the Sticky Toffee Pudding:

  • 25g x Butter
  • 90g x Sugar
  • 110g x Flour
  • 1 x Egg
  • 1 x Egg Yolk
  • 6g x Baking Powder
  • 90g x Chopped Dates
  • 125ml x Boiling Water
  • 5ml x Vanilla Essence
  • 6g x Bicarbonate of Soda

For the Pecan Sauce:

  • 10g x Sugar
  • 10ml x Water
  • 20ml x Double Cream
  • 10g x Chopped Pecan Nuts

Method - Sticky Toffee Pudding

  • Cream together the Butter and Sugar
  • Add the Eggs and mix well
  • Fold in the Flour, Bicarbonate of Soda and Baking Powder
  • Boil the Dates and Vanilla Essence in the Water
  • Slowly pour the hot liquid into the creamed mixture
  • Mix well and pour into four small, individual moulds and bake at 180c for 12 minutes

Method - Pecan Sauce

  • Add the Sugar and Water to a pan and cook until the sugar dissolves and it creates a thick, dark brown caramel
  • Carefully add the Double Cream and Chopped Pecan Nuts
