Milk Chocolate and Salted Peanut Parfait

To celebrate Chocolate Week, here is my Milk Chocolate and Salted Peanut Parfait.



  • 2 x Eggs
  • 125g x Caster Sugar
  • 500ml x Double Cream
  • 100g x Milk Chocolate
  • 75g x Salted Peanuts ~ (Blitzed)

Chocolate Sauce

  • 75g x Dark Chocolate
  • 50ml x Milk
  • 50ml x Double Cream
  • 8g x Caster Sugar


  • 80g x Milk Chocolate
  • Icing Sugar
  • 8 x Chocolate Sticks (optional)



  1. Melt the Chocolate in a bain-marie
  2. Whip the Eggs and Sugar over a pan of warm water until light and fluffy
  3. Slow add the melted Chocolate and the blitzed Salted Peanuts
  4. Lightly whip the double Cream and fold into the mixture
  5. Pour into 4 Mousse Rings and Place in the freezer to set for at least two hours.

Chocolate Sauce

  1. Boil Milk, Cream and Sugar together
  2. Add Chocolate and re-boil to melt the Chocolate
  3. Mix well and pass through a strainer

Serve and Garnish

  1. De-ring your Parfaits
  2. Melt the 80g of Milk Chocolate and pour ¼ on to a cool marble slab and spread out
  3. Trim the edges and carefully wrapped it around your parfait and fold the top to form a present like shape
  4. Repeat this with the other 3 Parfaits
  5. Place one Parfait in the middle of each bowl and garnish each Parfait with 2 Chocolate sticks
  6. Dust with Icing Sugar
  7. Pour the warm Chocolate Sauce in to a jug
  8. Serve the Parfait to your guest and at the table in front of your guests pour the Chocolate Sauce around.
