Why not serve a classic summer pudding with a twist of refreshing Pimms - the drink of the summer!

Summer Special: Pimms Summer Pudding


Pimms is the drink of the summer, so why not add this perfect addition to a classic dessert as it both enhances and draws out the flavour of the berries 

 

 

 

 

 


 

 

 

 

 

 

 

 

Ingredients - Serving Four 

1 x punnet of fresh Strawberries, rinsed and hulled 

1 x punnet of fresh Raspberries, gently rinsed 

1 x punnet of fresh Blackberries, rinsed

1 x punnet of fresh Blueberries, rinsed

1/2 x punnet of fresh Blackberries, rinsed

1/2 x punnet of fresh Redcurrants, removed from stalks

2 x tbsp Water

2 x tbsp Pimms

15g/1/2oz x Caster Sugar

1 x Vanilla Pod

6 x slices of White Bread, crusts removed

4 x readymade mini Brandy Snap Baskets

80g/3 1/4oz x Clotted Cream or Clotted Cream Ice Cream

1 x Spun Sugar Spirals to serve (optional)

 

Method - Summer Pudding 

  • Place nearly all the Berries into a bowl, keeping a few of each berry for decorations
  • Put the Water, Pimms, Sugar and Vanilla Pod into a pan and bring to boil
  • Pour over the Berries and cover the bowl with cling film and leave to cool
  • Once cool, drain (keeping the liquid) and discard the Vanilla Pod
  • Cut the Bread into equal-sized slices, deep enough to fit into your moulds*
  • Dip the Bread in the fruit liquid and line the moulds, slightly overlapping the slices of Bread, so you do not leave any gaps
  • Fill each mould with the Berry mixture then top each one with some remaining soaked Bread
  • Cover each ramekin with foil and place something heavy on top 
  • Chill in fridge for two hours

 

Method - Fruit Coulis  

  • Pass the remaining berry liquid in a pan and reduce until thick enough to coat the back of a wooden spoon
  • Remove from the heat and cool

 

To Serve   

  • Make a zig zag of Coulis on each serving plate 
  • Carefully turn out each Summer Pudding and place on the plate 
  • Place a Brandy Snap Basket on the opposite corner of the plate 
  • Scoop the Clotted Cream or Clotted Cream Ice Cream inside the Brandy Snap Basket 
  • Decorate with the remaining berries and a twirl of Spun Sugar 

 

*150ml / 1 / 4pt ramekins have been used.
