Valentine's Day with QSM Touch

It could be the perfect dish to wow your loved one with this Valentine’s Day....

Following the announcement of my new position as UK Ambassador for the Quality Standard Mark Scheme last week, I shared one of my favourite Lamb recipes with you. Have you had the chance to make it for yourself yet? This week it’s time for a Beef dish. Does Char-grilled Entrecote Steak with Cracked Black Peppers and Sea Salt Home-made Chips, Oxtail and Onion ‘Cottage Pie’, Green Beans, Peppercorn and Brandy Sauce tantalize your taste buds? It could be the perfect dish to wow your loved one with this Valentine’s Day…

Ingredients (Serves 4)

  • 4 x 6ox Sirloin Steaks
  • 8 x Large Red Skinned Potatoes
  • 2 x Medium White Onions
  • 1kg x Oxtail
  • 400g x Cooked Green Beans
  • 20ml x Double Cream
  • 10g x Butter
  • 10ml x Brandy
  • 5g x Green Peppercorns
  • 200ml x Red Wine Jus
  • Sea Salt and Cracked Pepper
  • 200g x Watercress
  • 1 x Shallot
  • 1 Litre x Beef Stock
  • 1 x Carrot
  • 1 x Stick of Celery
  • 2 x Cloves of Garlic
  • 20g x Flour

Method

Chips:

  1. Peel the Potatoes
  2. Cut each Potato into chunky chip shapes (approx 7cm x 1.5cm) – you’ll need 6 chips per person
  3. Keep the trimmings for the Mashed Potato
  4. Blanch in Salted Water for 5 minutes, drain, dry and then deep fat fry at a lower temperature for 5 minutes
  5. Once the Chips are soft, remove, turn the fryer to full heat and refry until golden brown and crispy
  6. Drain and season with Sea Salt and Pepper

Oxtail Cottage Pie:

  1. Trim and cut the Oxtail
  2. Pan fry until golden brown, add the Flour
  3. Place in an oven proof dish with the Carrot, Celery and Garlic
  4. Cover with Beef Stock
  5. Cook in the oven at 150 degrees for approximately 60 minutes or until the meat falls off the bone
  6. Use the remaining Potato trimmings in a pan with water, cook until soft then drain and mash, season with a half the Cream and Butter
  7. Place into a piping bag
  8. Peel the 2 Onions and cook in a pan of Milk for 15 minutes until the Onion are soft
  9. Cut in half horizontally
  10. Scoop out the middle leaving the two outer layers of the Onion
  11. Pick the Oxtail, season and stuff each Onion half with the Oxtail
  12. Pipe the Mashed Potato on top of the Oxtail and place into the oven for 10 minutes until piping hot and golden brown

Steak:

  1. Season your Steak and drizzle with a little Olive Oil
  2. Char grill in a hot pan for approximately 4 minutes on each side or until the Steak is cooked to your taste

Sauce:

  1. In a Saucepan, place the Green Peppercorns
  2. Flambé with the Brandy
  3. Add the Red Wine Jus
  4. Stir in the remaining Cream

To Serve

  1. Wash the Watercress
  2. Peel and finely slice the Shallot into rings
  3. Mix the Watercress and Shallots together with a little Olive Oil and season and place in the top right hand corner of the plate
  4. Place the Oxtail Cottage Pie next to the Watercress
  5. Place the cooked, seasoned Beans in the bottom right hand corner and place the steak on top
  6. Pour over a little of the Peppercorn Sauce
  7. Stack 6 Chips per plate next to the Steak
