Whole Baked Apple and Blackberry Crumble with Poached Blackberries and Calvodos Ice Cream

This impressive twist on the traditional Apple Crumble is great for a dinner party dessert. Serving the Apple Crumble in the Whole Apple gives it the wow-factor on the plate! Whole Baked Apple and Blackberry Crumble with Poached Blackberries and Calvodos Ice Cream.

Ingredients (4 portions)

  • 4 x Apple
  • 24 x Blackberries
  • 1 x Vanilla Pod
  • 30g x Butter
  • 30g + 10g + 5g x Sugar
  • 60g x Plain Flour
  • 4 Scoops of Calvados or Vanilla Ice Cream
  • Shot of Calvados
  • 100ml x Crème Anglaise or thin Custard
  • Icing Sugar

Method

  • Carefully cut the top off the Apples
  • Scoop out the insides (trying not to make any holes in the skin)
  • Remove any seeds and roughly chop the insides, place into a pan with ½ the Blackberries, 10g of Sugar, the Vanilla Pod and a little Water
  • Cook until just soft
  • Put the mixture back inside the 4 Apple shells
  • Carefully mix (crumb) the Butter, Sugar and Flour together
  • Put a ¼ on top of each Apple
  • Bake in the oven (160oC for approx. 30 minutes) or until the apple shell is soft and the Crumble is golden brown
  • Light poach the remaining Blackberries in a little Water, 5g Sugar and some Calvados
  • Place the Apple Crumble on to the plate, sprinkle with Icing Sugar, place 3 poached Blackberries around, Serve with Calvados Ice Cream and the Crème Anglaise or Custard
