Pan-roasted Bass, Cauliflower Textures, Trumpet Mushrooms, King Prawn and Lemon Grass Dumpling

Fillet of Brookfield Farm Beef, Truffle Potato Terrine, Sherry Glazed Onions, Watercress Purèe and Red Wine Jus
